This raw lobster claw & knuckle meat is High Pressure Processed (HPP) which allows the meat to be extracted raw. Then the meat is vacuum-seal in 1 lb bags and flash frozen for advanced freshness.
Allow to thaw overnight in the refrigerator. Gently empty thawed meat into a colander and allow to drain - do not press or squeeze the meat. Allow to drain in the colander for a few minutes, then it to cook and add to your favorite dishes.
Cooking method is up to you- sauté with low heat or butter-poach, you’ll know your claws/knuckles are cooked when they are opaque and have reached an internal temperature of 135* – 140* F.
