LIVE LOBSTER CARE
Ideally, lobsters should be cooked on the day they are delivered; therefore, it's best to schedule the delivery day accordingly. If you're unable to cook them upon arrival, here are the optimal methods to ensure they remain fresh:
- Remove the lid and place the entire box in the refrigerator. If there isn't enough space for the box, empty your crisper drawer, line it with newspaper, place the lobsters inside, and cover them with seaweed overnight.
- Ensure they are stored at a temperature between 35 and 40 degrees Fahrenheit.
Important Note: Never store lobsters in water or airtight containers.


FROZEN LOBSTER TAILS
Keep lobster tails frozen until you're ready to use them; do not refreeze.
Always ensure lobster tails are completely thawed before use — either by placing them in the refrigerator overnight in a bowl or on a tray, or by immersing the bag in cold water for quicker thawing.
For a Lobster Tail Party Pack, you can remove and thaw a few tails at a time. If you plan to use the entire case, allow it to thaw in the refrigerator for two days before preparation.
Before using, thoroughly rinse the lobster tails to remove the saltwater glaze (which is applied during processing to protect the meat), drain, and pat dry.
Scallops
Package contains approximately 36-40 succulent scallops per bag, for around 8 servings depending on your appetite. Simply remove the desired quantity and thaw in the refrigerator overnight for optimal freshness. Please note, do not refreeze after thawing. For the best cooking results, we recommend removing the side muscle from each scallop to ensure a consistent and delightful texture.
